Molokhia (Egyptian Jute Leaf Soup) Recipe

Molokhia is a beloved Egyptian dish made from finely chopped jute leaves cooked into a thick, flavorful soup. It is traditionally prepared with garlic, coriander, and broth, often served alongside rice or bread and paired with chicken, rabbit, or beef. This nutrient-rich dish dates back to ancient Egypt and remains a staple in Egyptian homes today. Known for its distinctive texture and earthy flavor, Molokhia is a comforting meal that brings families together and showcases the depth of Egyptian culinary traditions.

Ingredients

 

For the Molokhia Soup:

  • 500g fresh or frozen molokhia (jute leaves), finely chopped
  • 5 cups chicken or beef broth
  • 1 tbsp butter or ghee
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper

 

For the Garlic-Coriander Topping (Ta’leya):

  • 4 garlic cloves, minced
  • 1 tbsp dried coriander
  • 2 tbsp butter or ghee

 

For Serving:

  • Cooked white rice
  • Roasted or boiled chicken
  • Pita bread (optional)

 

Instructions

 

Step 1: Prepare the Broth

  1. In a large pot, bring the chicken or beef broth to a gentle simmer over medium heat.
  2. Add salt and black pepper, stirring well to enhance the flavor.

 

Step 2: Cook the Molokhia

  1. If using fresh molokhia, wash the leaves thoroughly, drain, and finely chop them using a sharp knife.
  2. If using frozen molokhia, let it thaw slightly before use.
  3. Reduce the heat to low and gradually add the chopped molokhia to the simmering broth while stirring continuously to prevent clumping.
  4. Cook on low heat for 3-5 minutes without allowing the mixture to boil (boiling can affect the texture and make it slimy).
  5. Turn off the heat and cover the pot to retain the flavor.

 

Step 3: Prepare the Garlic-Coriander Topping (Ta’leya)

  1. In a small pan, melt the butter or ghee over medium heat.
  2. Add the minced garlic and sauté until it turns golden brown and fragrant.
  3. Sprinkle the dried coriander into the pan and stir well for another 30 seconds to release the aroma.
  4. Immediately pour the garlic-coriander mixture over the molokhia and stir gently.

 

Step 4: Serve the Molokhia

  1. Pour the hot molokhia into a serving bowl.
  2. Serve it alongside a plate of white rice for a complete meal.
  3. Pair it with roasted or boiled chicken for an authentic Egyptian experience.
  4. For extra flavor, drizzle with fresh lemon juice before serving.
  5. Enjoy with pita bread if desired.
