Ta’ameya (Egyptian Falafel) Recipe

Ta’ameya, or Egyptian falafel, is a crispy and flavorful deep-fried patty made from fava beans, fresh herbs, and spices. Unlike the chickpea-based falafel common in the Levant, Ta’ameya has a lighter texture and a vibrant green interior. This popular street food is often served in pita bread with tahini, salad, and pickles, making it a delicious and satisfying meal. Ingredients

For the Falafel Mixture:

  • 2 cups dried fava beans (peeled and split)
  • 1 small onion, chopped
  • 4 garlic cloves
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1/2 cup fresh dill
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1/2 tsp baking soda
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder (optional)
  • 2 tbsp sesame seeds (for coating)
  • Vegetable oil (for frying)

For Serving:

  • Pita bread
  • Tahini sauce
  • Fresh vegetables (tomatoes, cucumbers, lettuce)
  • Pickles

 

Instructions

Step 1: Prepare the Falafel Mixture

  1. Soak the dried fava beans in water overnight.
  2. Drain and rinse the beans, then place them in a food processor.
  3. Add chopped onion, garlic, parsley, cilantro, dill, cumin, coriander, baking soda, salt, black pepper, and chili powder.
  4. Blend until smooth but slightly coarse, scraping the sides as needed.
  5. Transfer to a bowl, cover, and let it rest in the fridge for 30 minutes.

Step 2: Shape and Coat the Falafel

  1. Using your hands or a spoon, shape the falafel mixture into small balls or patties.
  2. Sprinkle sesame seeds on top of each falafel piece.

Step 3: Fry the Falafel

  1. Heat vegetable oil in a deep pan over medium-high heat.
  2. Carefully drop the falafel pieces into the hot oil.
  3. Fry until golden brown and crispy, about 3-4 minutes per side.
  4. Remove from oil and drain on paper towels.

Step 4: Serve the Falafel

  1. Place the falafel in pita bread.
  2. Add tahini sauce, fresh vegetables, and pickles.
  3. Serve hot and enjoy!
