Ingredients
For the Falafel Mixture:
- 2 cups dried fava beans (peeled and split)
- 1 small onion, chopped
- 4 garlic cloves
- 1 cup fresh parsley
- 1 cup fresh cilantro
- 1/2 cup fresh dill
- 1 tsp cumin
- 1 tsp ground coriander
- 1/2 tsp baking soda
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp chili powder (optional)
- 2 tbsp sesame seeds (for coating)
- Vegetable oil (for frying)
For Serving:
- Pita bread
- Tahini sauce
- Fresh vegetables (tomatoes, cucumbers, lettuce)
- Pickles
Instructions
Step 1: Prepare the Falafel Mixture
- Soak the dried fava beans in water overnight.
- Drain and rinse the beans, then place them in a food processor.
- Add chopped onion, garlic, parsley, cilantro, dill, cumin, coriander, baking soda, salt, black pepper, and chili powder.
- Blend until smooth but slightly coarse, scraping the sides as needed.
- Transfer to a bowl, cover, and let it rest in the fridge for 30 minutes.
Step 2: Shape and Coat the Falafel
- Using your hands or a spoon, shape the falafel mixture into small balls or patties.
- Sprinkle sesame seeds on top of each falafel piece.
Step 3: Fry the Falafel
- Heat vegetable oil in a deep pan over medium-high heat.
- Carefully drop the falafel pieces into the hot oil.
- Fry until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
Step 4: Serve the Falafel
- Place the falafel in pita bread.
- Add tahini sauce, fresh vegetables, and pickles.
